Good questions

What happens with an unpaid booking?

It is refused with "This booking is not confirmed", and it is left off the door list. Tickets you hand out yourself from a ticket batch are let in even before they are claimed.

Does it work with no signal?

Yes. Check-ins wait on the phone, up to 500, and go up with the time they were made when the phone is back online.

Who can check guests in?

Admins, community leads, the event's lead host, and co-hosts whose check-in permission is on. A co-host who declined or whose invitation expired cannot.

A guest booked several tickets. Do I check in all of them?

Your choice. From the list you can check in just one, or all that remain.
